Breakfast poached eggs

No matter how busy you are, breakfast is and should be the most important meal of the day! Considering how busy most of us are, it is important to start your day with a booster, preferably a healthy and light meal that will leave you feeling energetic. If you are on a diet, set up a menu because grabbing an apple is never an ideal option. Please, stop starving yourself because that is not healthy. I also understand that due to the economic structure in our country, some people leave home on an empty stomach and buy magwinya le ma fresh (fat cakes and fries) during tea break. Honestly it is so tempting but not healthy either.


2 whole meal muffins

8 slices mixed cold meat

4 medium eggs

2 large tomatoes

1 cup mushrooms 4 tablespoon fresh vegetable stock Salt and pepper

1 small bunch chives


Preheat the grill to medium. Cut the muffins in half and lightly toast them for 1- 2 minute on the open side. Set aside and keep warm.

Place 4 egg-poaching ring in a frying pan depending on how big it is and pour in enough water to cover the base of the pan. Bring to the boil and reduce the heat to a simmer. Break the egg into each ring and poach for 5 – 6 minutes until set.

Cut the tomatoes into eight thick slices and arrange on a piece of kitchen foil on the grill rack.

Grill for 2-3 minutes or until just cooked. Season to taste.

Peel and thickly slice the mushrooms

Place in a saucepan with the stock, bring to the boil cover and simmer for 4-5 minutes until cooked. Drain and keep warm.

To serve, arrange the tomato and the mushroom slices on the toasted muffins and top each with 2 slices of cold meat. Arrange an egg on top of each and sprinkle with a little black pepper.Garnish and serve at once.

HINTS AND TIPS For variation, omit the cold meat for a vegetarian version and use more tomatoes and mushrooms instead. Never forget to toast the muffin to avoid the sogginess. Simply pick an energy breakfast that fuels your body so you start your day with energy and jump start your metabolism. For a soft base spread the low fat cheese spread or avocado.
